On March 21 and 22, 2025, Level 300 students from the Home Economics and Agricultural Science Unit of the Vocational/Technical Department (VOCTECH) at Ada College of Education participated in an engaging practical session focused on the art of making flour and sugar confectioneries. This hands-on learning experience is part of the curriculum, designed to provide students with valuable practical skills and the opportunity to apply their theoretical knowledge in the kitchen.
Under the supervision of Ms. Pamela Nyadroh, the students explored various techniques used in preparing a range of cakes, including fancy, wedding, birthday, and anniversary cakes. The session began with an introduction to basic ingredients, such as different types of flour, sugars, and leavening agents, followed by a demonstration of proper mixing, kneading, and baking techniques.

Students were divided into groups of 5 or 6 members, resulting in 15 groups. Each group was tasked with creating their own variety of cakes and decorations. They worked diligently to perfect their recipes, ensuring that they followed instructions closely while experimenting with flavours and textures. The room was filled with the sweet aroma of freshly baked goods as the students eagerly honed their skills.
Additionally, students were introduced to essential safety and hygiene practices in the kitchen, including observing cleanliness, using equipment properly, and managing time effectively. By the end of the session, students had successfully measured and mixed ingredients with precision, mastered various baking techniques, and developed creativity and attention to detail in decorating and presenting their finished products.

These creations were then presented for tasting and evaluation. The practical session enhanced the students’ baking skills, encouraged creativity, teamwork, and peer-to-peer learning, and provided a valuable opportunity for students to build confidence in their culinary skills. This supports the College’s mission to train teachers inspired with academic and professional competencies, skills and attitudes in Technical and vocational Education for Basic schools in Ghana.

This experience aligns with the United Nations Sustainable Development Goals, particularly SDGs 4 (Quality Education) and 8 (Decent Work and Economic Growth).
Student Reflection:

– “I was furious at my lecturer when I was added to a group of gentlemen who were not involved in their previous practical groups… but after the cake practical, I realised it was insightful and educative. I acquired skills in cake preparation and now I can bake on my own.”
Ernest Amoo Yaw Owusu.
– “I can now bake cake even though I did not offer Home Economics at High School. I now have the skills of baking which will provide income for me. I do not regret my decision to join the vocational skills department.”
Sandra Agidi

In the coming weeks, students will engage in more advanced sessions, including working with composite flour, yeast mixtures, and other specialised techniques in sugar confectioneries. Stay tuned for updates on more exciting activities from the Home Economics Unit.
